We combine cashews and active cultures (H2O and nothing more) to make our cashew yogurt. Then we use the yogurt to make the cheese.

Empanosa

An Indian Samosa in the shape of an empanada. Our non-gluten crust is made from organic almond, millet, buckwheat and flax flours. The filling is Indian spices peas, potatoes, sweet potatoes and onions. Served with banana tamarind sauce. Priced per person.

Bistro Salad

Seasonal veggies like green beans, asparagus, peppers, squash and potatoes -- steamed and served in our Marsala Wine sauce. You can substitute Hollandaise, Thai Almond, Chipotle Crema or any combination of our other sauces. Served with rice and salad. Serves 20.

Chick peas, potatoes, and cauliflower in a rich Indian spiced stew. Served with rice and spinach dahl, and our banana tamarind, cashew yogurt, garlic, and optional spicy sauces.

BBQ Tempeh Tacos (Serves 20)

We make our own BBQ sauce -- sweetened only with raisins, dates and maple -- to BBQ the Tempeh and serve it with rice and our many bean chili on a hand-pressed organic white corn tortilla with our Chipotle Crema Sauce. What's Tempeh? Made from soy beans and fermented, Tempeh is like the next step beyond tofu -- healthier and with a better texture.
